Chile Colorado
This is a traditional Mexican-style dish.
Ingredients:
- 9 New Mexico dry chiles – washed, with stems and seeds removed
- 3 cups water
- 5 pounds boneless beef chuck roast, trimmed of fat
- ½ cup all-purpose flour
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- 3 tablespoons olive oil
- 1 large yellow onion, chopped
- 2 cups beef stock, or as needed
Directions:
- Prepare the Chiles
Add chiles and 3 cups of water to a medium stockpot. Bring to a boil, then remove from heat and let steep for 30 minutes to soften. - Make the Chile Sauce
Strain the chiles, reserving the cooking liquid. Transfer chiles to a blender with some of the reserved liquid and purée until smooth, adding more liquid as needed for a smooth consistency. Pass the sauce through a fine mesh strainer to remove seeds and skins; set aside. - Prep the Beef
Cut beef into 1- to 2-inch chunks. In a medium bowl, combine flour, salt, and pepper. Dredge the beef in the seasoned flour; set aside. - Sauté Onions and Brown the Beef
Heat olive oil in a large pot over medium heat. Sauté the onion until tender and translucent, about 5 minutes. Add beef chunks in batches to avoid overcrowding, browning each piece evenly. Set browned pieces aside, then return all seared beef to the pot. - Simmer the Stew
Stir in the puréed chile sauce. Add beef stock until the beef is just covered (or to taste). Bring to a boil, then reduce heat to the lowest setting and simmer for about 3 hours, or until the meat is tender. Add more stock if needed during cooking.
